How much turkey to buy
Plan on 1 pound of whole turkey per person if you want the platter empty after dinner. Plan on 1.5 pounds per person if you want sandwiches, soup, and a second-day plate. Those purchase weights include bone, skin, drippings, and the neck or giblet pack. They are not ounces of sliced white meat.
A 10-person table with leftovers needs a 15 pound bird. The same table without leftovers needs 10 pounds. Two 8 pound birds often brown more evenly than one 16 pound bird, and they still add to the same purchase total.
USDA thawing math starts the clock as soon as the bird leaves the freezer. Bacteria that survived freezing can grow again in the danger zone between 40 °F and 140 °F. Buy early enough that the refrigerator can finish the job before you preheat the oven.
How to use the turkey weight calculator
Enter the number of people who will eat turkey, counting children as full guests unless you already know they will only take a few bites. Choose leftovers if you want the 1.5 pound rate, or skip leftovers for the 1 pound rate. A high-chair that will only see mashed potatoes can stay out of the count if you are sure.
Read two results. Turkey weight is guests times the selected rate. Fridge thaw days uses ceil(pounds ÷ 4.5), which is this page’s way of turning USDA’s “about 24 hours per 4 to 5 pounds” into a whole shopping-week number. A 15 pound bird returns 4 days. A 10 pound bird returns 3 days. A 9 pound bird returns 2 days because 9 ÷ 4.5 is exactly 2.
Put the frozen turkey in a pan on a low refrigerator shelf so juices cannot drip onto ready-to-eat food. After it is fully thawed, USDA still allows 1 to 2 days in the refrigerator before you cook it. That slack is how a Sunday start still works for a Thursday meal on a 15 pound leftover bird.
If you buy a fresh, never-frozen turkey, skip the thaw result. Keep it at 40 °F or below and cook by the date on the package. The 1 and 1.5 pound purchase rates still apply. Fresh birds still need 165 °F in the same three sites as frozen-then-thawed birds.
Formula and a worked shopping list
Purchase pounds = guests × 1, or guests × 1.5 when leftovers is yes. Fridge thaw days = ceil(purchase pounds ÷ 4.5).
Twelve guests who want leftovers: 12 × 1.5 = 18 pounds. ceil(18 ÷ 4.5) = ceil(4) = 4 refrigerator days. Twelve guests who do not: 12 pounds and ceil(12 ÷ 4.5) = ceil(2.67) = 3 days. Eight guests with leftovers: 12 pounds and 3 days. Eight guests without: 8 pounds and ceil(8 ÷ 4.5) = 2 days.
If the store only sells even sizes, round the purchase weight up, then recompute thaw days on that larger number. A 13 pound label on an 8-guest leftover plan still thaws as ceil(13 ÷ 4.5) = 3 days, not the 2 days that an 8 pound bird would need.
Purchase weight and fridge thaw days from this calculator
| Guests | No leftovers (1 lb each) | With leftovers (1.5 lb each) | Thaw days, leftovers |
|---|---|---|---|
| 6 | 6.0 lb | 9.0 lb | 2 days |
| 8 | 8.0 lb | 12.0 lb | 3 days |
| 10 | 10.0 lb | 15.0 lb | 4 days |

| 16 | 16.0 lb | 24.0 lb | 6 days |
Why leftovers use 1.5 pounds
A roasted whole turkey yields far less carved meat than the sticker weight. Bone, skin, and evaporative loss take a large share. Families who want lunch meat the next day usually find 1 pound per person leaves a picked carcass and no spare slices.
1.5 pounds is a planning rate, not a USDA purchase rule. USDA pages tell you how to thaw and cook the bird you already bought. They do not set a legal serving size. If half the table is under five years old and will eat rolls first, you can still keep the leftover rate and freeze extra meat in shallow containers within 2 hours.
Boneless turkey breast is a different product. You can buy less purchased weight because you are not paying for a keel bone. This calculator assumes a whole bird or a bone-in roast in that 1 or 1.5 pound band.
The fridge thaw hint, and what it is not
Dividing by 4.5 splits the difference between USDA’s 4 pound and 5 pound phrasing and then rounds up so you do not start a day late. It is a hint for the shopping calendar, not a substitute for checking that the cavity is free of ice.
Cold-water thawing is 30 minutes per pound with a water change every 30 minutes, then cook at once. Microwave thawing follows the oven manual and also requires immediate cooking. Neither method belongs in this purchase tool. Use the turkey thaw time page for those hours.
Do not thaw on the counter, in the garage, in a paper bag, or in a dishwasher. The outer meat enters 40 °F to 140 °F while the center is still frozen.
One large bird versus two smaller ones
Two 8 pound turkeys for 16 leftover-minded guests (24 pounds total) still use 1.5 pounds per person. Each bird thaws as ceil(8 ÷ 4.5) = 2 days if you thaw them as separate packages. One 24 pound bird needs ceil(24 ÷ 4.5) = 6 fridge days.
Smaller birds reach 165 °F in the thigh, wing, and breast with less overcooked breast meat, which matters when children will only eat white slices. You still need a thermometer in each bird. Clock time is not the safety test.
If oven space is tight, roast one bird earlier, carve it, and refrigerate in shallow containers. Reheat leftover turkey to 165 °F. Keep the second bird for serving day.
Kids, bones, and plate waste
Count every seat that will take turkey. A toddler who eats three bites still sits in the same shopping math unless you have already decided adults will finish the platter. Undercounting is how a 14 pound bird is asked to feed 18 people and the dark meat disappears before the last plate.
Spatchcocked or cut-up turkey cooks faster and can be easier for small hands, but purchase weight is still the sticker pounds. Do not wash the raw bird in the sink. FSIS says rinsing spreads juices onto counters and nearby lunchbox fruit.
After dinner, carve remaining meat off the bones within 2 hours (1 hour if the room is above 90 °F). Refrigerate 3 to 4 days or freeze. Reheat leftovers to 165 °F.
A shopping-week calendar for a Thursday dinner
USDA’s thaw blog uses a 16 pound bird as about four refrigerator days, then notes you can start the Friday before Thanksgiving because a thawed turkey may wait 1 to 2 more days. This calculator’s ceil(pounds ÷ 4.5) for 16 pounds is ceil(3.56) = 4 days of thaw, which matches that story. Add the hold days yourself if you want slack.
A 24 pound leftover plan for 16 guests is 6 fridge days of thaw (ceil(24 ÷ 4.5)). That bird needs to leave the freezer early in the prior week. Two 12 pound birds for the same 24 pounds of purchase each need ceil(12 ÷ 4.5) = 3 days, which is easier on a small refrigerator.
Write the pull-from-freezer date on the store receipt. If you miss it, switch to cold water (30 minutes per pound, water every 30 minutes) or roast from frozen at least 50 percent longer. Do not catch up on the counter.
Thursday dinner: when a leftover-rate bird should start thawing
| Guests (1.5 lb each) | Purchase weight | ceil(lb ÷ 4.5) thaw days | Latest freezer-to-fridge day |
|---|---|---|---|
| 8 | 12.0 lb | 3 | Monday |
| 10 | 15.0 lb | 4 | Sunday |
| 12 | 18.0 lb | 4 | Sunday |
| 16 | 24.0 lb | 6 | Friday of the week before |
Accuracy limits
The 1 and 1.5 pound rates assume a typical American holiday plate with sides. A turkey-only meal, a smoked breast, or a crowd that eats mostly dark meat will not match the leftover pile this page implies.
ceil(pounds ÷ 4.5) can be a day longer than a fast-thawing 4 pound rule or a day shorter than a cautious 4 pound rule on awkward sizes. Confirm the cavity is thawed. USDA still allows cooking from frozen; that path takes at least 50 percent longer and still ends at 165 °F in the same three sites.
This page does not size ham, potatoes, or stuffing. Use the holiday meal quantities tool for a full table, then come back here if you change the leftover choice.
How it works
Bone and skin are part of the purchase weight. A boneless roast needs less purchased weight.
